Including all necessary fundamental for food physics and up to date in many paradigms in this area. Recommended for student up to junior reseacher, this books is not only the theoritcal but also covering idea of experiment. For senior researchers this would be alternative to integrate the idea into your topic however your study might need additional information from journal instead of this book.

I choose this book because its a complete guide to physical properties of foods! I am a physcial properties of foods teacher at Universidade Federal de Santa Catarina (Brazil) and I recommend it for use as a textbook or as a reference in Food Science!
